Taking a quick break from travel posts to share photos of this recent evening. Happy long weekend, friends!
One week ago my sister Bethany hosted a lovely dinner party in her new (can I still say new after one year?) apartment in New Haven, Connecticut. She called this her first “non-ordering pizza” dinner party and whipped up a special menu from this vegetarian cook book, The Forest Feast. Here’s what made the cut:
- Drinks: homemade sangria and white wine spritzers
- Appetizer: freshly baked garlic knots
- Salad: avocado, tomato, mozzarella, basil, roasted butternut squash
- Entree: gnocchi with roasted vegetables (onions, peppers, eggplant, squash)
- Dessert: s’mores with Peeps (recipe)
So the only thing that makes this Easter-related is the Peeps. Swap those out with regular marshmallows and this menu works year-round.
